In The Elder Scrolls V: Skyrim can you leave the main quest and return later?

In the main quest I have returned the horn to the Greybeards and killed a dragon with the Riverwood Inn Keeper. She is currently waiting in Riverwood. Can I go to the College of Winterhold and learn there, then return to the main quest? That is the main reason the Elder scrolls games are so popular and great. You can do everything else in the game, every quest, learn every spell and kill tons of dragons then come back and pick up where you left off on the main story line. I didn't beat the game til i was level 45.
yeah of course, I beat the main quest when I was level 4 and I kind of regret it because after that Id basically beet the game and not really experienced anything, of course there are so many side quests that now I'm level 35 and still going strong,
